I know I have inundated you recently with avocado recipes, but it seems to be my go-to treat so far this summer. Sometimes you don’t want to go to the trouble and work of making guacamole, and sometimes you you just don’t have all the ingredients. On a hot day when you don’t want to make (or eat) a big meal, this simple summer treat might just fit the bill.
Ingredients:
- One small avocado
- One small green onion
- Lime juice and sea salt to taste
1. Chop the avocado in the skin, about 1/4 inch cubes, and scoop out onto a plate.
2. Chop the green onion, stem and all, over the top of the avocado.
3. Squeeze a little lime juice over the top. Sprinkle some unground sea salt for a pop of flavor, and serve with chips or crackers.
