I know I have inundated you recently with avocado recipes, but it seems to be my go-to treat so far this summer. Sometimes you don’t want to go to the trouble and work of making guacamole, and sometimes you you just don’t have all the ingredients. On a hot day when you don’t want to make (or eat) a big meal, this simple summer treat might just fit the bill.
In true “whatever is in the kitchen” mode, I was just not in the mood to grocery shop the other day. I had everything I needed for my Pork chops in tomatoes, but I didn’t want the hassle of pulling out (and, of course, cleaning!) the electric skillet. So I raided the cupboards and fridge, and what I found was:
